Of a new recipe

Assalamu'alaikum, I'm forever grateful to Him, alhamdulillah....

I've been making pineapple tarts for quite sometime already. Sometimes taking order, sometimes for own consumption. This new recipe I tried is really worth it. It's been circulating for sometime already but I was not into it as I'm more focused on my own recipe.

Here's for you, it's good, seriously :

Cheese Pineapple Tart

Crust
150g unsalted butter
50g margarine
50g icing sugar
2 egg yolks 
225g superfine flour (or can use AP flour, sift 3 times)
35g corn flour
25g milk flour (dry milk)
Pinch of salt
50g grated cheddar cheese

Filling
I used store bought pineapple jam

Egg wash
1 egg yolk + 1/2tsp fresh milk (or 2 egg yolks)

Add all dry ingredients in a bowl, set aside.
Beat butter, margarine and icing sugar till smooth, add in egg yolks, beat till smooth, add in all  dry ingredients, beat till incorporated, add in the cheese, fold till incorporated, rest the dough in a zip lock bag and refrigerate

How to do it?
Take a little bit of the dough, flattened and put the filling inside, covering all of it.
Bake in the oven at 150C for 20-25 mins, bring out - will look like half cooked.
When it's no longer hot, glaze it with the egg wash and sprinkle the grated cheddar cheese.
Bake another 25-30mins at 160C.

And you are done!!
